As you all know, here at WBKR we recently lost our beloved Aunt Mary.  Aunt Mary was famous for three things really: her love/lust for Alan Jackson (lol), her New Year's Eve shows with Steve Horn, and her cooking.  Aunt Mary spoiled us with chess bars, banana bread, and her world famous Coconut Cream Pies, which, by the way, Moon used to steal and take home so he wouldn't have to share any with the rest of us.  At Aunt Mary's funeral, I asked some of her family members if they would share some of her recipes with me so that I could share them with you guys.  See Aunt Mary is always gonna be with us in spirit here at the station and in the kitchen.  And you'll know what I mean when you try her recipe for Coconut Cream Pie.  Check this out!

AUNT MARY'S COCONUT CREAM PIE

1/3 cup flour

2/3 cup sugar

2 cups milk

3 slightly beaten egg yolks

2 Tbs butter or margarine

1/4 tsp vanilla

3 stiff-beaten egg whites

6 Tbs sugar

1 cup coconut

Directions:

Mix flour, sugar and milk in pan.  Beat egg yolks lightly and add to mixture.  Stir well until smooth.

Cook over medium heat, stirring constantly until mixture boils and thickens.

Remove from heat and add butter and vanilla.  Stir well, then add coconut.  Pour into baked pie shell and cool.

Cover with meringue made of egg whites and 6 tablespoons of sugar.  Sprinkle with coconut and bake meringue until golden brown (about 10-12 minutes).

***You can also thicken the filling in the microwave.  And this filling can be used as filling for banana pudding as well.***
