APPLE, KALE AND SWEET POTATO HASH

1 Kentucky Proud sweet potato, diced
1 Kentucky Proud apple, diced
2 tbsp olive oil
Salt and pepper, to taste
1 bunch Kentucky Proud kale, cleaned and chopped

Directions (from the Kentucky Proud Kitchen):

Toss the sweet potato and apple with a tablespoon of olive oil, salt, and pepper. Roast at 400 degrees until tender and caramelized, about 15 minutes.

Meanwhile, saute the kale in a large sauce pan with the remaining olive oil until tender and slightly wilted, about 5 minutes. Toss with the cooked sweet potato and apple, then season with salt and pepper.
