BREAKFAST WRAP

6 large eggs
Salt & pepper to taste
Dash of Tabasco or pepper blend seasoning
1/2 cup diced tomato (1 medium tomato or 6 to 8 cherry tomatoes)
1/4 tsp. garlic powder or 1 clove fresh garlic, chopped
1 Tbsp. fresh cilantro
1/2 fresh avocado, sliced
1/2 cup shredded Mexican Blend or Cheddar Cheese
6 (6 inch) whole wheat tortillas

 

Directions:
In a small mixing bowl, beat the eggs.  Add salt, pepper and any additional seasonings.  Chop tomato.  Add garlic to tomato and mix well.  Cilantro may be added to tomato mixture or kept separate. Slice avocado.
Spray a medium sized skillet with nonstick cooking spray or a small amount of cooking oil and place over medium heat.  Add eggs to the skillet and scramble, cooking for 2 to 3 minutes or until eggs are set.  Place in a bowl or on a platter for easy assembly.
Warm tortillas in the microwave for 30 minutes.  Divide scrambled eggs among the tortillas.  Top each wrap with desired toppings (tomato, cilantro, avocado & cheese).  Fold top and bottom of wrap over and then the two sides to overlap in the middle.
