Merritt Bates-Thomas is back for another edition of What's Cookin'? and she has a delicious idea for all that leftover turkey at Thanksgiving.

 Turkey Gumbo

1 small onion, diced
3 cloves garlic, pressed
1/4 lb. Italian sausage
1 - 15 oz can tomato sauce
2 - 15 oz cans diced tomatoes
1 cup turkey, shredded or cubed
1/3 cup brown or wild rice
6 oz cut frozen okra

In a stock pot or soup pan over medium heat, saute' diced onion and garlic in a small amount of olive oil for 3 to 5 minutes. If onions or garlic start to brown reduce heat slightly. Add crumbled Italian sausage and stir the mixture while lightly browning the sausage. Add tomato sauce, diced tomatoes and stir mixture well. Cover and let mixture cook over medium-low heat for 15 minutes. Add turkey, rice and okra and reduce heat. Cover and cook for another 15 minutes or until rice is tender.

This is a great way to enjoy leftover turkey. Happy Thanksgiving!
