What’s Cookin’? Merritt’s Spring Salad Mix[Recipe]
Spring Mix Salad w/Strawberries, Hearts of Palm & Pecans &
White Wine Vinegarette Dressing
(recipe is given per salad)
1 cup mixed greens
5 strawberries, washed and quartered
1/2 heart of palm, drained and cut into thin strips
5 pecan halves or pieces may be substituted
1/3 cup white wine vinegar
2 Tbsp. extra virgin olive oil
2 tsp. dijon mustard
1 clove garlic, diced or pressed
Mix together with a whisk or in a dressing shaker.
Additions to the salad can include feta, goat or bleu cheese and grilled chicken, shrimp or salmon.
