Merritt Bates-Thomas is back for another edition of What's Cookin'? and she has a delicious dish perfect for the upcoming holiday season.

 1 small acorn squash, washed, cut in half lengthwise, and seeded

1/2 cup dry stuff mix prepared according to package directions
1/2 Tbsp dried low sugar cranberries, cut in half

Preheat oven to 350 degrees F. Wash squash and cut in half lengthwise. Scoop out seeds and discard. Prepare stuffing mix according to package directions. While stuffing is cooking cut cranberries in half. Add cranberries to stuffing and stir into the mixture. Place squash halves, flat side up in a small baking dish lightly coated with olive oil. Add stuffing into the squash cavity, Cover and cook for 30 to 45 minutes until squash is tender. Remove cover for the last 5 minutes of cooking.

Garnish with a small amount of blue cheese, if desired.
