Thick and Creamy Melted Cheese

Do remember the first time a server at a Mexican restaurant (with a secret behind that smile) put a bowl of the white-colored melted cheese on your table right next to your big bowl of tortilla chips? That secret was how amazing that dip was that you were about to eat and we sat there having no idea just how good they meant. I was born and raised in Madison, Wisconsin, the land of all things cheese, and for too much of my life queso had not been a part. I'm embarrassed to say how many years of my life were wasted only knowing melted cheese on a burger and nacho cheese.

That back of that dude's head exploded when he put that dipped-in-queso chip in his mouth for the first time. True story. The back of my head was reattached and then I ended my relationship with nacho cheese.

DOS REALES MEXICAN RESTAURANT

I have always loved this place. I still remember my first meal at Dos Reales, steak fajitas, two margaritas, and an obscene amount of chips and queso.

LUCHA CANTINA

Every single time I eat at Lucha, I eat way more than I should, but I have the best reason. Nowhere else in town will you taste so many unique and delicious flavors.

Are you thinking the same thing I am while looking at that Cheesesteak chimi above, that you're totally going to need another thing of queso?

FUEGO NUEVO GRILL

I know the menu here very well, but my heart struggles to order anything that isn't their carne asada tacos with onions and cilantro. Again, an obscene amount of chips and queso is always consumed. Adding some veggies = Less guilt.

CANTINA TACO

My wife and I were first-day customers when Cantina Taco opened its newest location in Loves Park, and we've been back more times than I can count. I can also tell you that of the four places mentioned here, this queso is our favorite.

For me, just like their Instagram post says below, "the best queso in town."
