This is as insanely delicious as it looks. I was handed a Tupperware container with a sample in this week.  Instead of trying just one bite, I ate the entire thing in about a minute and a half.

You make have heard of brookies, right?  A "brookie" is a blend of cookies and brownies.  I had some brookies recently thanks to my friend Karen.

Well, thanks to my friend Merritt, I got to gut a small Tupperware container of brownie pudding.  Did you know there's such a thing as brownie pudding?  I didn't either until Merritt decided to liven up our Valentine's Day and share the recipe with us during our weekly What's Cookin'? segment.

Y'all, it's freaking awesome.  Here's how to make it!

BROWNIE PUDDING

1 cup all-purpose flour
3/4 cup sugar
3/4 cup chopped pecans or walnuts (may be omitted)
1/2 skim cup milk
1/4 cup cocoa
2 tablespoons butter, melted
2 teaspoons baking powder
1 teaspoon vanilla extract
1/4 teaspoon salt
1 3/4 cup hot water
1/2 cup brown sugar
2 tablespoons cocoa
DIRECTIONS:
Combine the first 9 ingredients.  Stir well.  Spread batter evenly in a lightly greased 8 x 8 baking pan.
Combine water, brown sugar, and cocoa.  Stir well.  Pour mixture over batter.  Bake at 350 degrees F for 35 minutes.
Now, here's the interesting part of the recipe and how it bakes.  The water, brown sugar and cocoa mixture will actually sink to the bottom of the pan as the brownie part bakes up.  That gives the dessert is distinct pudding flair!
To serve, you can top with whipped topping and garnish with shaved chocolate, cocoa, or chocolate sauce from the finished recipe and a cherry or fresh fruit such as raspberries.
As you can see from the photo, we enjoyed ours with nearly all of the above- whipped cream, raspberries and some shaved chocolate.
