Need a Way to Use Leftovers? Make Ultimate Loaded Nachos!
I'll admit it, I am TERRIBLE at saving leftovers and forgetting to eat them. Plus, the portion size is usually so small, I can't use it in another recipe. But, yesterday, I had a life-altering epiphany... nachos.
I went shopping and started cleaning out the fridge when I realized I had like three olives, a half tomato that was on its way out, some rice from Chinese takeout and various meats from earlier in the week. What am I going to do with all this? That's when I saw my friend's Facebook post that showed her 'dump' nachos at the Bluegrass fest this weekend. DUH!
So, I took out all the leftovers and lined them up on the bar. It was like a fun feeding frenzy. They just put their plates together and heated up in the microwave for about 30 seconds. You can do this EVERY week! Here's some leftover ideas:
Meat
- Grilled anything (chicken - who can eat a whole chicken, pork chops, steak)
- BBQ anything (pork, chicken, etc.)
- Pot roast
- Shrimp/Fish
- Hamburger/ground pork/ground turkey
- Tofu
- Veggie crumblers
Veggies
This time of year go wild! My mom gave me about a zillion cucumbers and tomatoes. Dice them up and use them!

- Lettuce (use up that old bag before it turns brown)

- Corn (canned, on the cob or in a corn salad - add it!)
