What’s Cookin’? Holiday Brunch Bake[Recipe]
Merritt Bates-Thomas is back for another edition of What's Cookin'? and she's serving up a yummy holiday recipe!
Holiday Brunch Bake
1 dozen eggs
1/3 cup light sour cream
1 onion, chopped
1/2 fresh green pepper, chopped
1 cup sliced fresh mushrooms
2 small tomatoes, chopped (10 cherry tomatoes, chopped can be substituted)
6 ounces finely shredded cheddar cheese
Fresh parsley & quartered cherry tomatoes for garnish
Heat oven to 400 degrees F. Whisk eggs and sour cream until blended, pour into 13 x 9 - inch baking dish sprayed with cooking spray. Bake 10 minutes or until egg mixture is softly set. In a large skillet over medium heat, cook onion, green pepper & mushrooms in a tsp. of olive oil. Reduce oven temperature to 325 degrees F. Spoon tomatoes over egg layer and cover with onion, pepper, mushroom mixture and cheese. Bake for 30 minutes or until knife inserted in center comes out clean. Do not over bake. Note: 1/2 lb. crumbled sausage can be cooked with vegetables and added to the mixture. Garnish with quartered cherry tomatoes and parsley, if desired.
