A couple of Monday nights ago, I was exhausted. I worked all day, but did manage to go and get my second COVID booster, which I knew would probably give me a headache and wipe me out.  It did.

Consequently, when it came to make dinner, I wanted something quick and easy.  So, I made One Pan Wonder, which I believe is one of the most popular recipes (if not THE most popular) we have ever shared on our weekly What's Cookin'? segment on our radio show.

Our good friend Dorothy Simpson, from Tell City, Indiana, first introduced us to the One Pan Wonder way back in 2014.

It really is quick, easy and delicious.  The total prep time is ten minutes tops and it bakes in the oven in an hour. And you can literally, slide it in the oven and walk away until those sixty minutes are up.

Here's how to make it!

ONE PAN WONDER

3 skinless chicken breasts cut in half

2 cans green beans

6 large cut up red skin potatoes

1 pkg. zesty Italian dressing mix

1 stick melted butter

DIRECTIONS:

In a 9x13 pan, place chicken breasts in center, green beans on one side and potatoes on the other.

Sprinkle Italian dressing mix over the top.

Drizzle melted butter over it. Cover it with aluminum foil and bake at 350* for 1 hour.

Like we mentioned, it's quick, easy and delicious.

If you're in a rush and on the go (or you're completely worn out by your day and you have basically zero energy to cook for and feed yourself, THIS is the perfect dinner.  As I mentioned, the prep time is a breeze and you can just throw it in the oven and bake until you're ready to feed your face.

It truly is a One Pan Wonder!

**By the way, when I make this, I typically am just cooking for two. I use two chicken breasts (that I cut in half), one can of green beans and about four to five red potatoes.  And, I always have leftovers.**

If you like the sound of this One Pan Wonder, you may like this recipe too.  It's basically the same idea, but adds some lemon, Parmesan and garlic to the mix.

And here's another fun twist.  It's the same idea as well, but substitutes potatoes with sweet potatoes and broccoli for those green beans.
