Here’s a Delicious and Fancy Like Recipe for Bourbon Street Chicken
There's no doubt in my mind you're going to do it. You probably just did. You saw that this week's What's Cookin'? recipe is called Bourbon Street Chicken and you likely started singing Walker Hayes' "Fancy Like" to yourself. That song and subsequent ad campaign for Applebee's has just about everyone singing, "We fancy like Applebee's on a date night! Got that Bourbon Street Steak with the Oreo shake . . ."
In case you're one of the two people in the country who hasn't seen that commercial or heard the song, here you go!
Well, this week's What's Cookin'? recipe is going to draw inevitable comparisons. Our friend Kelly Bland, from the UK Cooperative Extension Office, is serving up a Kentucky Proud recipe that screams New Orleans! Here's how you can be all "Fancy Like" at home and serve up some Bourbon Street Chicken.
BOURBON STREET CHICKEN
1 tablespoon olive oil
2 pounds boneless chicken, cut into bite-size pieces
2 teaspoons garlic powder
1/4 teaspoon ginger
1/2 teaspoon crushed red pepper flakes
1/4 cup applesauce
1/4 cup light brown sugar
2 tablespoons ketchup
1 tablespoon apple cider vinegar
1/2 cup water
2 tablespoons Worcestershire sauce
1 (10-ounce) bag frozen stir-fry vegetables and rice
DIRECTIONS:
1. Heat oil in large skillet over medium heat.
2. Add chicken pieces and cook until lightly browned.
3.Except for vegetables and rice, add the rest of ingredients to the skillet.
Stir until well mixed.
4. Bring to a hard boil, reduce heat, and let simmer for 10 minutes. Meanwhile, cook vegetables and rice according to package instructions.
5. Serve chicken over vegetables and rice.
